Coconut milk is a healthy source of fat and when stewed with tofu it creates a filling meal. Consider spices while stewing like turmeric, coriander and cumin and adding fresh herbs like cilantro and basil after cooking. Pair with green beans and serve over rice to round the meal out with something green and fill up even more.
